HANDLING (with proofer)
1. Setup 4 x 6 on baking tray using pan release or a parchment paper.
2. Thaw covered overnight in cooler, 16 hours max.
3. Proof twice frozen size (approx. 25 minutes).
4. Allow to dry & score with an “X” on top.
5. Bake at 380° for 14-16 mins. with 5-8 sec. of steam.
6. Allow to cool before packaging.
HANDLING (Cooler to Oven - Cold Fermentation)
1. Setup 4 x 6 on baking tray using pan release or a parchment paper.
2. Cover pans with rack cover and place in cooler for 42 hours.
3. Score if desired.
4. Bake at 380°F for approximately 18 minutes with 5-8 seconds of steam.
5. Allow to cool before packaging.
